For us on the farm spring has really started to arrive when the first goose egg of the year has been laid. Somehow the arrival of that big egg makes it seem like winter won’t continue forever, and we will see green grass soon.
We’ve been fortunate that we’ve had fresh eggs, between the chickens and ducks, for most of the winter. Some eggs have frozen and cracked before we could get to them, but we were able to save enough for us, and our parents.
Our quail have also been laying, and it’s amazing that people cook with them considering how teeny tiny they are! As of now the quail eggs are just freezing immediately upon laying, but hopefully once it warms up we can try a few quail egg recipes to share with you.
For now we will just enjoy a sunny side up goose egg, and dream of spring.
